  1. Preheat the oven to 380F
  2. Mix the wet ingredients together in a bowl
  3. In a separate bowl, mix the dry ingredients together
  4. Stir the wet and dry ingredients together just until combined, about 10-12 seconds

  5. Raise the oven temp to 400F so the heating element turns on and bake 20-25 minutes



This is the second recipe where I compare half a dozen different recipes to come up with the common factor between them all, and I'm very pleased with the results. This particular recipe matches very closely to Alton Brown's blueberry muffin recipe, which is also where I got the trick of preheating slightly low and turning the heat up to baking temperature in order to get the heating element to add more activation heat to the leavening.
